  • 4 Huge eggs, beaten
  • a big pinch of salt
  • 1/2 spoon Black pepper
  • 1/4 cup fresh spinach, chopped
  • 50 GM cherry tomatoes
  • 1/3 cup mozzarella cheese
  • 1 spoon Virgin olive oil


  • In a mixing bowl combine 4 large beaten eggs, a large pinch of salt, 1/2 tsp black pepper, 1/4 cup fresh spinach, 50 g diced cherry tomatoes, 1/3 cup mozzarella cheese and 1 tbsp virgin olive oil. Mix. Mix well, and pour into muffin moulds.
  • Bake at 200°C for 20 minutes and enjoy your freshly baked nutritious muffins!
