Instructions

Step 1. First grind the rajma and groundnut coarsely.

Step 2. Cut carrot and beetroot roughly.

Step 3. In a bowl, add the rajma and peanut mixture along with the vegetable mince. Add roasted cumin powder, chili powder, salt, chaat masala and roasted gram flour to this mixture. Prepare a dough.

Step 4. Add one spoon of thick hung curd and knead a smooth dough.

Step 5. Make small kebabs and roll them in sesame seeds.

Step 6. Air fry on a tawa or apply oil on both the sides and fry till golden brown.

Chicken and Marinade

  • 2 chicken breasts de-skinned and chopped
  • 1 cup plain yogurt
  • 1 tbsp ginger garlic paste
  • 1 tsp chili powder
  • 1 tsp turmeric powder
  • 1/2 tsp black pepper powder
  • 1/2 tsp garam masala
  • 1 teaspoon salt

To grind green masala –

  • 2 green chilies
  • 5 cloves garlic chopped
  • 1 onion chopped
  • 1 cup coriander leaves
  • 1/2 cup mint leaves
  • 1 inch fresh ginger

other ingredients –

  • 2 onions chopped
  • 1 bay leaf
  • 2 cardamom
  • 1 cinnamon stick
  • 5 cloves
  • 1 tbsp lemon juice
  • 2 cups brown basmati rice
  • 1 cup water
  • 1 tbsp ghee

Instructions

Step 1: Marinade Ingredients: Mix 2 chicken breasts, one cup plain yogurt, one tablespoon ginger-garlic paste, one teaspoon chili powder, one teaspoon turmeric powder, half teaspoon black pepper powder, one teaspoon yogurt. Put garam masala and a tsp salt in a bowl and coat the chicken. Cover and let it marinate for 2-3 hours.

Step 2: Spread on a baking tray and bake in a preheated oven at 180 degree celsius for 10 minutes. alternatively, cook the pieces in a non-stick pan for 10 minutes.

Step 3: Heat 8 cups of water in a large pan. Add rice with whole spices and salt and cook till cooked. Do not overcook. Drain off excess water and let it cool.

Step 4: Grind the green spices finely and keep aside.

Step 5: Put ghee in a pan and fry the onion till it turns golden brown.

Step 6: Now add green paste and cook on low flame for 5 minutes.

Step 7: Add a cup of water and let it boil for 2-3 minutes.

Step 8: Add cooked rice and chicken pieces, lemon juice, cover and cook on very low flame for 8-10 minutes. And add onion ingredients.

Step 2: Soak dates in 1/4 cup of hot water for 15 minutes.

Step 3: Blend to make a smooth puree.

Step 4: Heat milk in a pan and let it boil for 5-10 minutes till it thickens.

Step 5: Add oats, and date puree along with cardamom powder and saffron.

Step 6: Let it boil for 5 minutes while stirring continuously.

Step 7: Serve the kheer hot or cold garnished with chopped almonds.
