The world celebrates Coconut Day on 2nd September. The coconut plant is one of nature’s most versatile products. Coconut has so many wonderful uses: making curries with coconut milk and cream of coconut, drinking coconut water or milk, using coconut oil for cooking, coconut butter for breakfast, making it an alcoholic drink (pia colada) , tropical smoothies, adding coconut milk or oil to your morning coffee, skin care and hair and body care and much more.

The first celebration of World Coconut Day took place in 2009.

What is coconut? Is it a fruit, nut or seed? Botanically speaking, coconut is a fibrous one-seeded drupe, also known as a dried drupe. However, a coconut can be all three: a fruit, a nut, and a seed. Store-bought coconut is not the same as the coconut that grows on a coconut palm. An untouched coconut has three layers. The outermost layer is called the exocarp. It is usually green in colour. The next layer is the fibrous husk, or mesocarp, which surrounds a layer of hard wood called the endocarp. Endocarp surrounds the seed.

Coconut oil is made by pressing dried coconut meat to make milk and then the oil is extracted from the milk. It has a firmer texture at cold temperatures and becomes liquid at warmer temperatures. There is a lot of confusion about the health benefits of coconut oil because it is saturated fat. The American Heart Association (AHA) recommends consuming 30 grams of coconut oil daily for men and 20 grams of coconut oil for women. Coconut Curry Recipe (30 Minutes)


  • 1 tbsp coconut oil
  • 1 onion, chopped
  • 5 cloves garlic, minced
  • 1 tbsp fresh grated ginger
  • cup cauliflower, chopped
  • chopped carrot
  • cup chopped capsicum
  • cup shiitake mushrooms, sliced
  • 1 tbsp curry powder
  • 1 pinch red pepper (for heat, optional)
  • 2x 14 oz cans coconut milk
  • 1 cup vegetable broth
  • sea ​​salt and pepper to taste
  • 1 cup white or brown rice, cooked according to package directions.


  • Step 1: Wash and cook one cup of rice according to the directions on the package.
